S1’s Christmas gift was a home made Sous Vide machine.
Actually, no it wasn’t, her gift was my promise to remove all the hassle of cooking with 2 kids for 2 week nights each week.
A Sous Vide machine is a warm water bath controlled to precise temperatures. Vacuum sealed meat is cooked slowly at a precise temperature for long periods to ensure the meat is cooked perfectly throughout.
It might not be the most romantic Christmas gift she ever gets, but it’s one straight from the heart. With 2 kids, it’s a luxury. Perfectly cooked meat with no effort from S1 (I put it on before I go to work). Nothing hot in the kitchen so the kids can’t burn themselves and ready to eat whenever we are ready to eat it.
Tonight’s dinner, lamb gigot, cooked in mint sauce for 12 hours at 56.6deg c (134f). Perfect medium rare tender lamb from top to bottom, finished off with a quick sear in a hot buttery frypan. Served with a warm quinoa and butternut squash salad and topped with a whisky and honey sauce.
And it was all ready about 15min after the kids were in bed.
